Verte de Cambrai Mache (Valerianella locusta)
Also known as Lamb’s Lettuce or Corn Salad, Verte de Cambrai Mache is a delectable cold-hardy green. Deep green leaves have a mild, slightly sweet flavor and crisp texture. A terrific choice for winter production. Sow between September and April for greens from December to May, or sow in late fall to harvest the following spring.
