Spelt is a popular, nutritionally dense ancient grain most often ground into flour for baking. A hardy variety that is grown like winter wheat, spelt is tolerant of poor soil conditions unlike many other grains.

- Germination: 3-4 days
- Maturity: 110-125 days
- Broadcast in full sun around first frost date or up to 3 weeks before.
- Loosen soil before scattering 30-40 seeds per square foot; plant 1" deep.
