Large white taproots reach 8-10” long and have grassy leaves. This Mediterranean heirloom is also known as Vegetable Oyster. Some believe its taste resembles oysters while others compare it to asparagus or the Jerusalem artichoke. Like parsnips, salsify can overwinter but requires mulching in colder growing regions. Delicious baked, roasted, and simmered in soups. Long storing. Biennial plants yield edible flowers the second year.

- Germination: 14-21+ days (can be slow to germinate).
- Maturity: 120 days
- In mid-spring, direct sow seed ½” deep in loose, well-drained soil. Double-digging is recommended. Plant seeds in a 2” band; 1” apart. Keep moist.
- Thin plants to 2-3” apart; space rows 24” apart.
- Dig carefully around plants when harvesting to avoid breaking roots.
