A Mediterranean cousin of the globe artichoke, the cardoon’s broad, pale stalks can be fried, sautéed or steamed for an unmistakably “artichoke” taste. With eye-catching violet flowers and spiny silver-green leaves, it also makes a fine ornamental. Attracts pollinators.

- Germination: 12-21 days
- Maturity: 120-150 days
- Start indoors 8-12 weeks prior to last frost. Plant seeds ½” deep in seed starting mix. Transplant in full sun after frost danger has passed. Compost well.
